Recipes for Recovery 005: A Gift for your Future Self

Eating six times per day can be a daunting task. Six decisions to be made. Six meals/snacks to be bought, prepared, plated, eaten, and digested. Six opportunities for your eating disorder to sneak in. Six opportunities for you to fight back! A lot of effort goes into this stuff, so I encourage you to work smarter, not harder. One of the best ways to do this is by meal prepping. I know, I know, the thought of meal prepping can be overwhelming, but it is actually a lot less effort in the long run. Why cook every day when you can cook once and make it last all week? 

We all need to start somewhere, and a great place to start is by making something simple. Muffins are about as simple as it gets. They can be a part of breakfast (paired with yogurt and fruit), or they can work great as a snack (even better warmed up). They are delicious, easy, and ready when you are. Your future self may be struggling at some point this week, they may need something quick and easy to eat, they may even find themselves longing for the comfort of a homemade goodie. Have these delightful muffins ready to go. Trust me on this one, your future self with thank you. 

Easy Apple Crumble Muffins

Prep time: 10 min

Cook time: 20-30 min  

Difficulty: Easy peasy! 

Servings: 12 muffins or 24 mini muffins 

 

Ingredients:

Dry: 

  • 2 cups all-purpose flour

  • 1 tsp cinnamon 

  • ¼ tsp nutmeg

  • ¼ tsp baking powder/soda 

Wet:

  • 2 eggs 

  • ¼ cup maple syrup

  • ½ cup applesauce

  • ½ tsp vanilla extract 

  • ½ walnuts 

  • 1 cup apple, chopped 

Directions:

  1. Combine wet ingredients (except for apple) 

  2. In a separate bowl, combine dry ingredients (except for walnuts) 

  3. Mix wet and dry 

  4. Fold in apple and walnuts 

  5. Place in a greased muffin tray (fill each cup up about ¾ of the way) 

  6. Bake for about 30 min (20 min if making mini muffins!) 

  7. ENJOY!
